Like a Real Chef!

I’m not much of a chef. Sure, I cook a lot, but it’s almost always following a recipe. When it comes to throwing things together myself, it never turns out well. That’s why I was so proud of myself for coming up with my own soup recipe tonight! Now, I know that soup is pretty easy to throw together, but this was really good. And I used spices! Correctly!

Mexican Vegetable Soup
Serves 4

1 carton vegetable broth
10 oz can rotel tomatoes
1/2 cup refried beans
8 oz can green beans
4 oz red potatoes, quartered
1/2 cup frozen onion, thawed
1 carrot, chopped
1 can kidney beans, drained and rinsed
1/2 tbsp cumin
1/2 tbsp chili powder
1 tsp red pepper flakes
1 tsp onion powder
Mexican cheese (optional)

Basically, all you do is throw everything in a pot and bring to a boil. Then cover and let simmer until the potatoes and carrots are soft, about 20 minutes. Add optional cheese.

Then laugh at your dog when he realizes that he can’t fit through the cat door. No, we don’t have a cat. The former owners of the house had one and we never bothered to change the door.

Murphy was not pleased with that situation.

I’m about to go to the gym for a 5 mile speedwork session that I’m dreading. Not so much that run that I don’t want to do, but the gym crowds. I hate the gym in the months of January and February. I honestly think that gyms should offer incentives to long time members. I’ve been paying LA Fitness money for 8 years, I think I should get a longer time allotment on the treadmill! I better go before it gets too late. Wish me luck.

  3. Ug, I start back at the gym tomorrow. Not as a resolution, just cuz it’s too cold for me to motivate to run outside anymore. Not looking forward to the crowds.

  8. I hope you were able to have a good run. I was a member of LA Fitness for years too. You really need to put on your game face and be brave to go inside this time of year, that’s for sure!

  11. Don’t worry, in about 6 weeks the new years resoluters will have fallen off the wagon, and you’ll have your gym back. Never fails.

  12. I’ve been wanting to get all soupy this winter and try a bunch of soups for home, work, snacking, whatever. I only made soup one before (Lentil) and it made my husband barf. Hmmm… should I be trying this again???

  13. I’ve really been struggling this week to stay positive about the loads of resolution-ee’s that are at the gym this week. It is a good thing that they are trying to get healthy, right? Fighting over lockers is going to get old though… is it wrong to hope that they either become regulars (and used to our AM gym routine) or start coming during their lunch hour instead?

    • I just wish that the gym would give people more time on the machines if they’ve been members for a long period of time. The new resolutioners would eventually get there if they wanted.

  14. LOVE this Murphy pic! And totally agree about gym memberships…why can’t there be VIP status like other organizations?! Honestly I’m kind of sick of LA Fitness but there aren’t a lot of other options in Atlanta. I REALLY wish we had body pump.
