Monday Fun Day

It was still nice out come Monday, Jason’s day off, so we had a nice dinner after I got off work to make up for the fact that we didn’t really get to do anything all weekend.

We met at Verde, a little taco place that’s about 15 minutes from both my office and my house.  This is the place that I walked by a couple weeks ago and started sulking about because I wanted to live in the neighborhood.  I guess I can always just eat there and pretend, right?  That’s what I did.

We started out with margaritas.  Typically I’m not a margarita fan.  I just don’t like the taste of sour mix.  Verde, however, offered the Organic Margarita, which was tequila, agave nectar and lime juice.  No sour mix!  Sold.  Although I’m sure it’s not actually organic.

I thought about getting tacos, but ultimately went with the Verde salad and added fish with jalapeno ranch dressing on the side. Looks like chicken but I assure you that it was grilled fish. Not that there’s anything wrong with eating chicken, it just wasn’t.

When your husband works on the weekends, sometimes you have to make Monday your fun day.

  1. Great dinner out! I always enjoy Mexican

  2. AWWW I love this!! you two should make this a regular “thing” during the week to make up for the fact that Jason works weekends. That’s kinda why Scott and I do mid-week “date nights in” on Wednesday nights. To give us both something to do together that’s just for us, that makes a weeknight feel more special and the week feel less mundane. It works like a charm (plus who doesn’t like a date night complete with wine, in the middle of the week??).

PS. I’m a HUGE fan of making your own margaritas with agave, fresh lime juice, some muddled strawberries and tequila. WAY better than sugary sour mix. Your drink looks delish!! And you both look really cute in that pic btw :)

  3. I’m not a big fan of typical margaritas either and do not like frozen ones. However- those that are made with a few fresh ingredients always taste great to me (and I’m a big tequila fan). I actually really love Bethenny Frankel’s bottled Skinnygirl margaritas. Ever have one?
    …and are you coming to Blend??? :) :) :)

    • Unfortunately not. :( I have two trips already planned in May so it just didn’t work out. Oh and no, I’ve never had the Margarita.

  4. Monday Funday sounds great – you never have to worry about reservations!

  5. You look SO cute in that pic! I am glad you made Monday your funday. I agree, you should do this more often since you can’t do it on weekends. You are my hero for handling weekends without Jason like a champ! I am sure you get down about it sometimes, as I know I would, but you make good of your time and embrace it. That’s what counts (and for that margarita, I think I might like it too, not a fan of them typically either!).

  6. Monday Funday is just as fun! Tony loves Verde, but it’s not my favorite. When we go I always go with the verde salad. I’ll have to try the “organic” margarita next time!

    • One of my co-workers who lives in the area was saying it wasn’t her favorite either. I just like the people watching from the front patio.

  7. I don’t like sour mix either. I always go for the ones made with agave and straight lime instead, they taste way better. Bonus points if there’s grand marnier involved.
    Sounds like a great Monday!

  8. Looks like a fabulous Monday to me – and those do sound like good margharitas!

  9. Who says the weekend has to be Saturday and Sunday?!
The past few summers I’ve worked at restaurants which meant Mondays and Tuesdays rather than Saturdays and Sundays off–it was a different kind of weekend!

  10. It probably was organic. I know you can buy organic tequila, agave and limes..so here’s hoping right!

  11. I am so ready for margaritas on patios. It’s been warm enough for a while now but we haven’t gotten around to it yet. Yay for Monday Funday!

  12. I remember Verde having a really good margarita. I hate sour mix too and am SO picky about my margaritas.

We need to grab lunch together one weekend!

    • We should have a sushi date. I remember talking to you about getting sushi and whine when you were pregnant with B and we’ve never done it!

  13. Aw, I’m glad that you guys had a fun day :) And your salad looks yummy.

    I wish I didn’t like margaritas…

  14. Yummy dinner – I could go for something fresh like that…and eating outside! We had a few days of really warm weather 2 weeks ago, and then we went back to normal New England spring weather.

  15. I don’t like many margaritas because of the nasty sour mix, too, so the “organic” one sounds freaking amazing! Sign me up :)

  16. Your salad looks awesome!! I think its great you made Monday your fun day. Mondays are tough enough as is.. why not add a little fun in the mix!

  17. I was at Verde on Monday night too! With some girlfriends. I end up going there a lot b/c it’s so close to my house, but it’s not my favorite mexican food in the world. Good patio and good chips (duh) though!
