Weekend

I have to admit, I’m feeling a little impatient this weekend.  It’s like this whole new life is waiting for us (okay, that’s a tad dramatic, but whatever) but I’m still waiting for it.  I was hoping that when Jason announced that he was leaving his station, they’d have him leave right away.  In the past, that has been protocol when someone goes to a competitor.  But they are understaffed and did not ask him to leave, so he’s been working all weekend.

Despite probably having to work next weekend too (which is my birthday – he asked for it off and was denied because someone else had it off already), we decided to sign up for a 5K in the morning. Jason’s been doing the Couch to 5K program and recently ran 30 minutes without stopping.  We’d been talking about doing a 5K once he got to this point and one of my favorites, the Run the River 5K in Roswell, is what we signed up for.  It’s my favorite because it’s flat.

Jason’s been running a lot.  I, on the other hand, have not.  So I decided that I should probably do something about that and set out for a 4-mile run yesterday.  While the run itself wasn’t bad, the pollen in the air was killing me.  I have never had asthma but I imagine that’s what it feels like because I could not take a deep breath.  It sucked and I was sneezing for the rest of the day, despite taking three showers.  My sneezing didn’t stop me from making an excellent dinner though, Skinny Macaroni and Cheese soup!

I would definitely make this again.  I decreased the cheese by a little bit, but otherwise followed the recipe, using vegetable broth instead of chicken and omitting the dry mustard because I didn’t have any.  So good!

I obviously don’t learn from my mistakes, because I ended up doing another 4-miles outside today, only it was a walk not a run and was with Murphy.  We didn’t intend to walk that far.  4 miles might not sound far, but with Murphy stopping to sniff things every two seconds, it takes a long time.

We went into a neighborhood across the street that I don’t usually walk through for some reason.  I turned down a random street and thought that if I kept going, I would eventually get to one of four main roads, and I could get home from there.  After about an hour, I started sneezing again and thought about turning around.  I felt like that would take twice as long, so I kept going, looking at pretty flowers all the way.

After a really long time, we found the main road and realized we were about a mile up from our house.  At this point, my sneezing was out of control and I really wanted to get home.  Murphy seemed oblivious and continued sniffing everything in sight.

We finally got home, I took another shower, hung out for a bit (read: napped) and made another delicious dinner.  This time, I made Chipotle Shrimp salad bowls.  Or bowl rather, since it was just for me.

I accidentally bought cooked shrimp and was really worried about overcooking them, so I basically just heated them up.  I also didn’t use any corn because I didn’t have any.  This was delicious though and the chipotle sauce was nice and spicy.

And like that, the weekend is over.  I’m counting down the days until I’ll be able to spend my weekends with Jason.  Less than two weeks!

  1. Running outside is just harder right now, I guess we need to accept it. I wonder when this pollen will go away so we can breathe again?! :)

  3. Nice job on the runs, even with the allergies. Mine are outta control lately too!! I am so glad you are ALMOST to the end of Jason’s job and can enjoy your weekends that much more soon!!

  4. I know exactly what that feeling is like… just waiting for a new life to begin! Luckily it doesn’t seem like it’s far away for you- but man- that SUCKS that he has to work on your bday. Seriously. Greg has to work on weekends all the time and fly all over, and part of me likes it, part of me hates it. It sucks when it happens on a weekend when something big is going on (like this weekend he has to miss my stepdad’s suprise 60th bday party), but it is what it is.
    Anyway- I want to HUG fluffy Murphy!!! Glad he made it 4 miles! :)

  5. I don’t sneeze from the pollen, but it gives me a killer headache if I’m out in it too long. So annoying. I can’t wait for allergy season to pass!
    Both of those dishes look great, especially the soup!

  6. I’m sorry the pollen is bugging you so much! That stinks. Hopefully we will get some rain this week and that will wash some of it away! Your food looks really tasty! You are so good at finding unique recipes.

  8. I totally don’t blame you for wanting the weekends to get here, the ones where you’ll get to enjoy them WITH Jason. SO close yet so far, right?? I also love that he’s been running – that is awesome! I love running with Scott :)
