A Light Monday Night Dinner

I have a new favorite recipe site: Healthy Aperture.  If you follow me on Pinterest and you notice that I’ve gone on a pinning spree, it’s probably because I’ve been perusing Healthy Aperture.  There are a few blogs that show up on there quite often that I read regularly, but there are tons of others that I haven’t really heard of that are proving to be great recipe resources.

Dinner tonight came from one of those sites.  I made Crisp Broccoli and Red Bell Pepper Salad with Minced Tofu and Peanuts in a Tangy Peanut Dressing (say that three times fast!).

This was really good, as anything with a peanut sauce normally is.  I made a couple of small changes.  I steamed the broccoli first as I don’t really like it raw and I used orange pepper instead of red because the red peppers at Publix looked pretty sad.  I also used almond butter instead of peanut butter.

Everything came together very quickly and it was husband approved, always a plus.  This one moving from my “recipes to try” pin board to my “recipes that I have made that I will make again” one.   I don’t often make the same thing over and over (aside from refried beans), so if I find something that I want to make again and again, that really says something.  It says yum.

  1. I need to check out Healthy Aperture. I’ve heard of it, but always forget to go there when I’m looking for recipes ideas. Heading over there now.

  2. That looks really, really good! And I think I’d make the same changes, especially the steaming the broccoli and the using almond butter changes.

  3. I’m the same way. I always say I want to make certain recipes again, but then I just try a new one. I hardly ever repeat. That looks great!

  5. I am the same way with broccoli – it has to be crisp tender, not raw otherwise its gross. Hooray for the hubs approval! :D

  6. I think I would eat cat poop if it were covered in a peanut sauce. Peanut sauce can do no wrong :-)
