When I go to the gym after work, as I did tonight, I don’t get home until about 7:15 or 7:20. That’s when I’m just doing a 30-40 minute workout. It’s even later if I’m taking a class or training for a race and have to run longer. When I get home, I usually take Murphy for a 15 minute walk, then I shower, so by the time I get around to making dinner, I need to make something that’s quick or I’ll end up either just snacking or eating frozen pizza.
Here are two quick meals that I’ve made recently that I enjoyed.
Southwestern Stuffed Sweet Potatoes (using frozen peppers instead of frozen corn):

I like sweet potatoes, Jason does not. So when I saw this recipe that promised to turn any sweet potato hater into a lover, I wanted to try it out. Besides, I knew I’d like it! Jason thought that it’d be great with a regular baked potato, but he still wasn’t fond of the sweet potato. I’m not sure what he has against those orange tubers. I think they’re great. I microwaved the potato to bake it, so this meal didn’t take long to prepare at all.

I don’t often make a recipe over and over, because there are too many new ones to try, but sometimes I do find something that I really, really like. This is that something. I’m going to confess that I never go to Chiptole, so I can’t vouch for the authenticity of the taste, but it tastes pretty damn good! (I prefer Willy’s, a local burrito chain that’s similar only they have tofu!) I’ve been getting frozen shrimp at Target and I find it to be pretty decent, especially for the price. And who knew, Target has good avocados too! My Target has a little grocery part. Bigger than a normal Target but much smaller than a Super Target.
And lastly, a quick dessert, Grain-free Peanut Butter Chocolate Chip Cookie Dough Bites:

I was a little nervous about trying a cookie made of chickpeas, but I couldn’t taste them at all. I even told Jason that there was a secret ingredient and he couldn’t figure out what it was. The recipe says that the dough isn’t that great and that the cookies need to be hot to be good, but I beg to differ, I liked the dough by itself and I think the cold cookies are good too.
And those are some quick(ish) meals that I’ve been eating. Cause I’m sure you were wondering.



I’m all about the quick meals — it’s amazing that it’s still really easy to eat healthy on the go, too. I’ve started cooking a bunch of veggies in the oven all at once one night a week, then just reheating the leftovers for dinner. Add beans or a veggie burger and — dinner’s served!
I can’t believe Jason doesn’t like sweet potatoes. They are the only ones I like!
Still need to try those chickpea cookies… I just can’t imagine their taste!
They had a lot of peanut butter in them, so they basically tasted like a very moist (sorry if you hate that word, but that’s how to best describe it!) peanut butter cookie. You couldn’t taste the chickpeas.
I’m in the mood for one of those sweet potatoes now. I LOVE them too. Peter used to hate them but he has finally come around.
I LOVE sweet potatoes, but I just don’t care for them with savory toppings. I like them either plain or with some sort of nut butter topping. So strange, but I guess you like what you like (right Jason?). I prefer Willy’s too, but they closed ours down over on this side. I bake sweets with chickpeas all the time, so I imagine these would be delicious!

I’ve been wanting to try that chickpea recipe but was afraid it would taste weird! Now I wish I had one right now (yes, for breakfast, haha). yum!
You couldn’t taste the chickpeas! It just tasted like peanut butter.
I know several people who don’t like sweet potatoes and it blows my mind! ha! I can’t imagine. But then again I hate goat cheese and I know that baffles a lot of people!
Yum!! I love sweet potatoes an that looks delish. So does the shrimp does. I love a good quick stir fry. And the protein balls also look quite tasty, I must try them! Bet I wouldn’t taste the chickpeas either.

I love a good quick meal. I used to not like sweet potatoes, but I think that was before I’d really tried them. Now I love them!
Stuffed potatoes are such an awesome, easy dinner! My go tos for quick meals are stir fry, eggs or salads!
My favorite is an egg sandwich, salad, and sweet potato.

I LOVE sweet potatoes- and Greg prefers boring old white baking potatoes. He likes sweets, but just prefers any other kind. I don’t get it. Sweet potatoes are SO much better.
I’m a big fan of using chickpeas in baking. I need to make Chocolate Covered Katie’s cookie dough dip!
I can’t imagine life without sweet potatoes. Okay, I’m being kind of dramatic, but I love them! Anthony prefers regular potatoes, but when I get sweet potato fries he’s happy to eat those.
I am not a sweet potato fan either, I love reg potatoes!
