Aside from this afternoon, which dragged, this week has gone by quickly which is sort of weird because it’s been somewhat of a trying week. For a bunch of different reasons that I don’t even want to get into (or really totally know, for that matter), I’ve just been in a pissy mood this week. So, I was kind of glad to come home tonight and just do nothing.
Although, I had to endure a monsoon first.

What does one do on a rainy Friday night when she has no plans? Cook, obviously.
I get the majority of my recipes from Pinterest nowadays. I still have tons of cookbooks, but somehow it’s just easier to look at my pinboards and find something appealing. I get a little overwhelmed when I try to pick something out of a cookbook. Maybe I just need cookbooks with pretty pictures, who knows?
There are definitely some things that I’ve made that I haven’t liked (I usually won’t blog about them in that case), but for the majority, most recipes that I try are pretty good. But every now and again, I find one that is just great.

This was the Warm Spinach Salad with Fried Egg and Potatoes from Martha Stewart. Thanks Martha, you make a good salad. Kind of nuts, it was so simple, but so tasty. This will definitely get a repeat performance. I always forget how much I enjoy a good potato. And because I liked it so much, here’s another picture.

The cooking wasn’t over after dinner. I had some bananas that were looking a little rough.

Would you believe that I just bought these on Sunday and they weren’t even ripe then?! Anyway, ripe bananas = some sort of bread, only this time, I went with this Almond Zucchini Bread recipe instead of a traditional banana bread.

Blurry picture but I can assure you that it was very good. Now I am just trying to prevent myself from eating the whole loaf. You know, with my whole no snacking after dinner (which doesn’t include dessert; I can have dessert. I just don’t want to mindlessly snack after that.) goal thing.



I love fried eggs. A lot.
It seems like a lot of people had blah weeks. Looking forward to a fun dinner tomorrow though!!
Crappy week here too. I have barely been out of the house for over 2 weeks and watched enough gymnastics and swimming for a lifetime. I’ll have to check out Pinterest for recipe ideas, I always skim Foodgawker when I need inspiration.
Looks yummy! All of it. I love doing egg, sweet potato, spinach, onion, and mushroom “hashes” for dinner. So easy and flavorful.
What is with bananas getting ripe so fast? Ours do too. I’m guessing it’s the heat? At least we’re drinking a ton of smoothies lately so they get used up instead of getting lsot in the freezer like they normally do.

Our bananas ripened really fast this week too, and got eaten right before I was ready to make them into bread.

If you put a fried egg onto anything it makes it better!! This whole post made me hungry for dinner and it’s only 5:00pm.

I am in a pissy mood too. I should have stayed home Friday night. I love fried eggs on greens. Looks great!
I freeze stuff that I bake then I won’t be as tempted to snack. Gawd if you love the mindless eating problem, can you share the secret?

Definitely not solved. We polished off that loaf in 24 hours. Umm, yeah.
