Superfood Ravioli from Costco

If my last post implied that I only bought three things at Costco, well that was a lie.  Those are just three of the typical things that I always want.  The thing with Costco shopping for a family of two is that it’s always a bit of a gamble.  They have good deals on things like apples and spinach, but will we eat them on time?  They have some interesting looking products but they’re big, so if you don’t like them, you’re throwing away a lot of money.  We took a gamble, however, on these Superfood Ravioli.  Kale ravioli?  Sign me up!

I don’t eat a ton of pasta.  I like it but it’s so easy to overeat.  So when I made myself a bowl of ravioli, I made sure to measure it out.  Each one cup serving had 220 calories so I measured out a portion of 1.5 servings.  I knew that it would still feel like a very small amount so I looked through the fridge for something to bulk it up with.  A zucchini that was going to be past it’s prime in a week?  Perfect.

It worked!  I sauteed the zucchini slices in 1 tsp of olive oil until they looked done and then mixed it all with some pasta sauce and some feta cheese (a huge tub from Costco).

Any good Costco finds lately?

  3. Kale Ravioli?! I might have to steal that idea and recreate it at home. I just can’t do Costco (or any of those jumbo stores). :)

  4. We have a freezer in our garage so we buy a lot of frozen fish and vegetables and chicken from Costco. It is such an easy way to have healthy foods on hand.

  5. Tony and I just got a Costco membership this past February when we got to the point that the boys were eating food so quickly. It really is a lifesaver for us to be able to buy things in bulk now! I’m with you on bulking up pastas with veggies! It’s the best way to be able to eat pasta and get a good dose of veggies in! This looks delicious!

  6. That sounds really good actually, I love the idea of bulking up pasta with squash. It has almost the same texture, and if the sauce is good you can almost trick your palate.

  7. Totally agree that costco can be a gamble. I wish it wasn’t because there are so many things I’d try there otherwise!

  8. I do the same thing with adding veggies to my pasta! I love having a big dish of food rather than a little bit, and a true single serving of pasta is just so small.

    (Yes, I am addicted to the American diet.)
