Okay, those don’t look the most appetizing, but look what’s inside? Yum.
A co-worker of mine sent me this recipe for Broccoli-Cheddar pockets and I made them the other day. I followed the recipe exactly with just a little bit less cheese. Not that it mattered, they were definitely cheesy. I used the Pillsbury French Bread which probably isn’t the healthiest thing, but it tasted good. I might try it with whole wheat pizza dough next time though. Don’t tell Jason.
And look at this! Remember when I was told that I never eat salads at home? Boom.
This was a Pinterest find, as most of the things I make nowadays are. This was Chopped Salad with Creamy Vinaigrette Dressing. I just sort of used what veggies I had on hand – cabbage, arugula, romaine, red peppers, avocado and then some whole wheat elbows. For the dressing, I used only 3 tbsp of mustard and 1/4 cup of oil and 1/4 cup of water instead of the 1/2 cup of oil. At first, the dressing had a little too strong of a mustard flavor for my liking, but after a while, it grew on me. If I made it again, I would probably do just 2 tbsp of mustard. That’s just me though; I’m not the biggest dijon fan.
