Lazy Cook

It might look like I cook a lot, but truth be told, I’m a pretty lazy cook.  Seriously.  Yesterday started off promising.  I normally make scrambled eggs for breakfast because it’s easy.  Crack some eggs into a pan, scramble.  But I went out on a limb and made a smoothie.

This was Laura’s Carrot Cake Batter Shake.  It had whipped cream because it was Sunday and that made it acceptable.  I don’t know why I think that making a smoothie is any more difficult than making eggs.  Really, it’s because I hate that I can’t put the Vitamix in the blender.  First world problems, I know.

I had this grand plan that I was going to make this delicious looking salmon recipe for dinner.  I had even bought myself a nice piece of salmon the day before.  But then, somehow, I ended up mixing a can of tuna with some hummus and calling it dinner instead.  Salmon, tuna, same thing?  Eh.

So, today I was determined to make the salmon, mostly because it had already been in the fridge for two days and I needed to cook it before it started to go bad.  But once I looked at the recipe a little closer, I realized it seemed sort of complicated and did not jive with my lazy girl cooking style.  So what did I do?  I put some onion dip (Sabra Greek Yogurt onion dip which is awesome) on the salmon instead.  Fancy salmon recipe, onion dip salmon recipe, same thing too, right?

I did saute some kale with some onions and mushrooms and olive oil as a side.  I decided, however, that I wanted to put it under my onion dip salmon to make a pretty salmon salad so it could at least look like I was a non-lazy cook.

Pretty, but genius here forgot that my salmon had skin on it, so after I ate it, I had to take the skin off the kale and throw it away before I ate the kale.  Oops.  This is what happens when I try to be ambitious.

  2. I go through stages with how ambitious I am with cooking, right now is a super lazy period. I feel you!

  3. honestly, I’d call myself a lazy cook too. I pin a TON of recipes all the time but have yet to make a single one. I go to the same usual meals most of the time, with few ingredients in them…the more ingredients on the list, the less likely it is I’ll EVER attempt the recipe!!

  4. If I were the one responsible for meal planning and execution, we’d have the same 5-7 things all the time, and one of those would be ordering pizza. Thankfully, Jerry does 99.9% of all that jazz so I have time for other more important things. Like surfing the web.

  5. I think I NEED to become more of a “lazy cook!” Honestly, I spend way too much time making things- and way too many calories too! I need to do more simple” things requiring fewer ingredients- at least for 2 out of 3 meals. I need to realize that it’s OKAY to have some store-bought waffles or a (P28) bagel for breakfast- it doesn’t have to be a huge production every single day. :)

  6. I’m a total lazy cook too, I feel bad because I’m home all day, but I would rather have a cheap, easy meal than spend all day making a meal! When I first started staying home, I was making these really elaborate meals every night, that got old really quick!

  7. That smoothie sounds awesome. I’m lazy about making smoothies because I hate cleaning the blender lol!
