I woke up on the wrong side of the bed this morning. I’m not sure why since I had a fun night last night. I went over to one of my best friend’s houses that I hadn’t seen for a few months because she was out of the country. It was fun to catch up and she made a really good dinner (fish, green beans and rice). So it was sort of a surprise that I woke up all pissy this morning. Maybe I just didn’t sleep well and didn’t realize it.
So since I’m not eating gluten at the moment, nor am I trying to make a dairy-ific meal, I’m kind of at a loss for what to eat in the mornings. I know I could do a smoothie, but I really enjoy having a cup of coffee and don’t really want to drink that and a smoothie. Too much drinking, not enough chewing.

So, I’ve been having egg whites with some spinach mixed in and a slice of Udi’s GF toast. Meh. My lackluster breakfast added to my bad mood this morning, I think. That and I just could not wake up. I drank a bunch of coffee, but still felt really tired for some reason. Blah day at work, blah three mile treadmill run, blah walk with Murphy but then celebrated National Taco Day! That finally made me feel better. Tacos for the win.

This was a variation on this Lentil-Veggie Taco recipe and I really enjoyed it. For a really long time, I stuck with soft tacos because I thought they were healthier, but it turns out that the calorie count is about the same. Two hard tacos have 110 calories and they taste better to me.
Here’s to hoping I wake up on the right side of the bed (which is actually the left side, I guess, well, the left side when I’m in the bed, is that the right or the left? I have trouble telling my left from my right anyway. Whoa, tangent.) tomorrow. At least it’s Friday. And I have leftover tacos.

i swore i had to be the only adult with right/left challenges. sometimes i think about turning in a car (b/c right’s the easy one) which is pathetic
and always get confused on how to label bed-sides. if you are lying in bed and looking at the ceiling, i’m on the right….but if you stand looking at the bed, it’s be the left….blah. i also call it the passenger side (i.e. in a care)
I have to do the left hand makes the L thing a lot. I sleep on the opposite side of the bed as you, whatever side that is.
I sleep on the right side of the bed and maybe you should try out some baked oatmeal (how’s that for a random comment?). If you buy the GF oatmeal, you can guarantee it’s gluten free. In a bind, I sometimes make PB&J in the morning, which you can obviously do on GF toast. And to add some pizazz to your eggs, try topping them with some salsa and more avocado — that’s sure to brighten up you breakfast. Hope you’re in less of a funk tomorrow. It happens to the best of us and you’re entitled to have an off day every once in a while for sure.
How about nut butter and jelly on toast for breakfast? Or hot cereal? Or veggie breakfast burrito? I’m not very creative with breakfasts during the week, but I know what you mean about coffee (or tea) and smoothies. Luckily I usually have espresso which is gone too quick to be a problem.
I hate days like that!!! Hope today is a better one! Is there a gluten free oatmeal you could try? do you like oatmeal? Guessing maybe not or you would have by now
I don’t really like it, even though I wish I did.
I really do hate when I wake up feeling that way. Also, having dreams that piss me off and then lead to me being pissy that day. No fun. I’m really glad you turned the night into something better and I hope today is great for you! The weekend is almost here!
I woke up on the wrong side of the bed today too. At least it’s the weekend!
I hate days when I’m in a bad mood for no discernible reason. Hope your Saturday was better!
I like hard and soft tacos, but sometimes the crunchy ones are just way more satisfying. Hope your weekend was good and the pissiness subsided!
