Barbecue in Bethesda

I had a nice three day weekend in Maryland with my family.  Somehow it passed by way too quickly, but it always does.  On Friday afternoon, Jason and I flew in to BWI airport.  It’s a little farther from National or Dulles, but sometimes you can save as much as $40 per person. My mom took the day off so she was able to pick us up.  We were going out to a nice dinner on Saturday night, so we decided to keep it laid back and stay home and grill.

First up: shrimp!

I don’t know why I never think to grill shrimp when I’m at home, but I never do.  It’s easy though and they were tasty.

We also had salad.

And I sauteed some brussels sprouts basically using this recipe, which is my go-to brussels sprouts recipe.  The key is getting them charred.  Really.  The key would also be to take a picture that isn’t blurry, but I apparently haven’t quite mastered that yet.  Or the char, I guess.  These could have used a little more.

For our entrees, my mom and I shared some swordfish, while Jason had steak.

Grilling is one of those things that we always say we need to do more often and then we don’t.  I guess it’s because Jason and I really only have one night where we eat dinner together (Saturday) without him either being very tired (Friday) or needing to be tired so he can go to sleep (Sunday).  So we often will go out to dinner on Saturday nights.  But, we really do need to grill more often.

Gloomy and Gross

Today was gloomy and gross and the last place I wanted to be was at work.  But, so is life and I made it through the day.  I did a weight workout at lunch and while sometimes that doesn’t feel like enough time, it was nice to come home after work, put on my favorite sweats and relax.

I was feeling kind of down and really wanted comfort food to go along with my sweatpants.  I wanted refried beans, but went out on a limb and made something that I pinned like a year ago – Rainbow Peppers and Shrimp with Rice Noodles.

I changed some things up based on what I had on hand.  Mainly, I didn’t have brown rice noodles, so I used a combination of udon and soba. It was good, but no refried beans.  I had some fun new stuff to read…

and while it should be an enjoyable evening, I just feel very blah today.  Maybe tomorrow will be less rainy and I’ll be less moody.  I should have eaten the refried beans.

Dreary Day

Today was the definition of dreary.  One of those days where you just don’t want to get out of bed.  Despite having two cups of coffee, I just couldn’t wake up and desperately wanted to take a lunchtime nap in my car.  Instead, I attempted to go to Target.  I say attempted because when I got there, it started pouring and I didn’t want to get out of my car.  So I just sat there for 40 minutes.

(It wasn’t that dark out; there is some sort of Instagram filter on the picture).  While I was sitting in my car, I had this great idea.  What if there were napping stores?  Like places where you could go during your lunch break or whenever and pay a small fee to take a nap?  I don’t know if it would be like pods or beds or what, but I’d pay like $5 to take a 30 minute nap!  Someone needs to invent this.  Please.

The afternoon dragged on and by the time work was over, I was still pretty tired but made myself go to the gym, where I did a 3-mile interval run as part of the boot camp.  I actually felt much better after running and had more energy than I’d had all day.

Though it was rainy and gross out, it was hot and steamy and a typical rainy night comfort meal like soup wouldn’t do.  Instead, I made salad.  For some reason, Target has really decent frozen shrimp.  Much better than Kroger or Publix.  I bought some this past weekend, knowing that I wanted to make Celery, Artichoke, Hearts of Palm and Shrimp Salad. I’ve had this cookbook forever and I think this is actually the only thing that I’ve ever made from it, though I’ve made it several times.
