WIAW – The Unemployed Edition

It’s been exactly one month since I got laid off. I can’t believe it. Time really flies. I’m not even sure what I’ve been doing with myself besides applying for every job that I think I’m either qualified for or not qualified for but sounds interesting. The trips to Florida and South Carolina have made the month pass quickly too.

Once I got over the whole “woe is me, why did this happen?” thing, one of the main things that I worried about was mindlessly eating all day since I was in the house with not much to do. I mean, one of the main things besides worrying about my lack of income. It’s been sort of surprise to me, but I find that I’m actually eating less than I was when I was in an office for 8 hours a day.

Here are yesterday’s eats. Breakfast was something that I used to eat all the freakin’ time but somehow fell out of rotation for a while. It sounds gross, but bear with me, it’s good. I swear.

Cottage Cheese Bowl
1/2-3/4 cup low fat cottage cheese
1 tbsp peanut butter
1/2 banana sliced
1/4 cup raw oats
stevia to taste

Mix it all up and this is what you have. I also do this with yogurt which doesn’t sound as gross for some reason.

For dinner, we busted out Peas & Thank You again. I worked on the Thai Veggie Burgers (and subsequently burned them) while Jason made some baked potato rounds. I opted to eat my burger on a lettuce wrap so I could have more potatoes. Don’t be fooled, what you see on my plate here is not all I had. Those suckers were good. I’m not sure what he coated them with.

I think that part of the reason that I’m eating better at home is that when I was at my job, I was looking to food as boredom relief. I didn’t really have much that I could do to take a computer break besides eat a snack (it wasn’t a particularly friendly office, I couldn’t really go chat with anyone) so that’s what I did. Now I just have to figure out how not to do that when I’m employed again. Hopefully I won’t be so in need of boredom relief at my next job.

One More Long Run + WIAW

As much as I love the weather in October, I’m sort of ready for this month to be over. I’ve kind of spread myself too thin and not allowed for enough relaxation time. Aside from this weekend, where I have to run 12 miles one day and 5 the other, I’m doing a race every Saturday for three weekends in a row, including one in Charlotte, which is a four-hour drive from here. In addition to the races, I’m also going to a birthday party for one of my best friends next weekend and attending a Halloween party the Friday of Halloween weekend at one of Jason’s co-worker’s houses.

I think I’ve talked about the specific races that I’m doing, but just because I like making little bullet pointed lists, here they are again:

• October 15th – Peachtree City Classic 15K (about an hour from my house)
• October 22nd – Rocktoberfest Dowd YMCA Half-Marathon (Charlotte, NC)
• October 29th – Atlanta Marathon Relay (in town and my first relay race of any distance)

The main race that I’m training for is obviously the half-marathon. I’m going to use the 15K as a training run and then my portion of the relay is only 5.something miles, so I’ll be totally fine for that. I’m excited, but a bit overwhelmed and anxious to get this show on the road. One more long run until race weekends start. That’s what I keep telling myself. Just one more long run.

Burnout is definitely still lingering. Last night, when I got home from work, I had intended to put on my running clothes and run five miles. I don’t know if it was a sugar crash from the copious amounts of candy corn that I’d eaten at work or what, but instead of immediately changing clothes, I got in my bed and took a nap for 30 minutes. Fortunately, Jason woke me and up reminded me that I was just going to be upset with myself if I didn’t run. I knew he was right so off I went. I ended up only getting 4 miles in because it started to get dark, but it’s better than nothing and I’m glad I did it. Surprisingly, I felt good doing my 45 minute tempo run today.

I managed to capture my daily eats today for WIAW. It’s very evident that I need to go grocery shopping. For breakfast I had an open face PB&J sandwich with a cup of coffee.

I got hungry around 10:30, so I had a Vitamuffin. These go on sale often at Target and Publix and I like to keep a box in the office freezer.

9 times out of 10, I bring my lunch to work, but today was that one time that I didn’t, primarily because I had nothing to bring. I decided to use my Living Social deal that I’d purchased from Whole Foods a few weeks ago and go there.

I had some freelance work to do, so I thought I’d kill two birds with one stone and bring my laptop with me. Did you know that Whole Foods has free wifi? They do. Unfortunately, I spent a little too much time wandering around the store and by the time I bought my food and sat down to eat, I only had like 20 minutes which wasn’t enough time to write what I needed to write. Oh well.

I know, I know, frozen pizza again. I also had some crackers, an apple and some dry cereal throughout the day. I really need to go grocery shopping.

What I’ve Been Eating

I’ve been participating in What I Eat Wednesday on and off for a while now, but I’ve realized that I really don’t enjoy taking pictures of one day of eats. My food at work is unappealing and I don’t feel comfortable taking pictures with anything other than my iphone at work and they never come out well.

So, instead of showing you one day of food, I’m going to show you what I’ve been eating for the past couple of days. I don’t know if this counts as a true What I Ate Wednesday, but we’ll go with it.

If I cook something, I pretty much always take a picture of it, but it doesn’t always make it to the blog. So, it’s sort of nice to do a What I’ve Been Eating post because some of this food was good and deserves to be shown.

I bought a big carton of mushrooms and really needed to use them up. For some reason, Cream of Mushroom soup came to mind. Sort of odd because I’m not much for cream based soups. I’d love to say that I changed my mind, but I’m still not one for cream based soups. I guess that’s probably for the best, although this one used light cream and had okay nutritionals. I used this recipe.

I’m not sure how this happened, but I somehow promised my co-worker that I’d bake her cookies. Her daughter is deathly allergic to peanuts, so she can never have peanut butter or peanuts in her house. So, when I asked her what kind of cookies she wanted me to bring into the office, she quickly said peanut butter. I went with a Mama Pea recipe, always a crowd pleaser. My white sugar was all dried up so I ended up using all brown sugar. It made the cookies very moist, almost too so, but delicious nonetheless.

I don’t know when I got obsessed with curry dishes, but I’ve been cooking them pretty much all year. I usually just throw together a bunch of stuff, but this time I used an actual recipe. It was pretty similar to the curry that I always make, only it used veggie broth and soy sauce instead of water and miso paste. Curry is always best with a side of warm naan, Trader Joe’s Garlic Naan to be exact.
